Potato Pie





3 - 4 lbs peeled potatoes, thinly sliced
cheddar cheese, grated
1 tsp ground thyme
chopped chives, fresh or dried
1 lb bacon
salt & pepper

Line a pie plate or casserole dish with bacon, leaving half the slice of bacon hanging outside of the dish.
Layer potatoes, cheese, chives, salt & pepper, repeat until you have 4 layers.  Add thyme to the first layer only.
Pull bacon up over the top and fasten the center with a skewer.
Pie should be 4 - 5 inches thick in the middle.

Cover with foil and bake at 400 F for 2 hours.
Remove foil and continue baking for 30 minutes until fork tender and bacon is cooked.

Top with Maple Bacon Sauce

1 cup mayonnaise
1/2 cup sour cream
1/4 cup maple syrup
1 tsp bacon bits

Combine all ingredients in a medium bowl and serve over cooked pie.

Eat-More Bars




1/2 cup peanut butter
2 cups semi-sweet chocolate chips
1 cup corn syrup
1 cup oatmeal
1 cup chopped peanuts

Melt syrup and chocolate over low heat in a non-stick saucepan
Remove from heat
Add peanut butter and mix until melted
Add oatmeal and nuts and mix well
Pour evenly onto buttered cookie sheet
Set in fridge for 30 minutes

Sweet Hawaiian Crockpot Chicken





Ingredients:
1 cup pineapple juice
1/2 cup packed brown sugar
1/3 cup light soy sauce
2 lbs chicken breast, chopped into bite-sized pieces

Combine juice, sugar and soy sauce.  Pour over chicken.  Toss to coat.  Place in Crockpot and cook 6-8 hrs.
